Crafted exclusively from 100% Pinot Noir grapes, this wine originates from the Clos Salomon vineyard, a monopole owned solely by the du Gardin family since 1632. The vineyard spans 7 hectares and benefits from a south-east exposure with brown limestone soils, contributing to the wine's unique terroir. The estate practices organic viticulture and employs traditional winemaking techniques, including destemming, a 5-day cold soak, fermentation with ambient yeasts, and ageing for 12 months in French oak barrels (25–33% new), without fining or filtration.
