Pierre Sauvion Muscadet Fildefere is a bright and vibrant white from the Sèvre-et-Maine sub-appellation of the Loire Valley. Crafted by the historic Sauvion estate, this cuvée is made from 100% Melon de Bourgogne grown on sandy-granite-schist soils at the river’s mouth. Fermented and aged on fine lees in stainless steel, it showcases the region’s maritime influence and the winery's expertise in sur lie ageing.
● Colour: Very pale straw with silvery highlights. ● Aroma: Fresh citrus—lemon zest and lime—joined by crisp green apple and a saline-mineral flintiness. ● Palate: Clean and light-bodied, with lively acidity, subtle creaminess from lees contact, pronounced stone-fruits and pear, a gentle spritz, and a stony, bracing finish.

The name Fildefere highlights its origin near the Loire’s mouth—where salty ocean breezes imbue a distinctive marine character. Sauvion’s decision to bottle under screwcap preserves freshness and the subtle slight spritz common in sur lie Muscadet. Enthusiasts note it drinks well above its price. It’s a textbook modern Muscadet: precise, saline, lees-textured, and an absolute classic for oysters and shellfish.
