Barbadillo Palomino is a dry white wine made from 100% Palomino grapes, the same variety used in the production of Sherry. Sourced from vineyards in the coastal region of Cádiz in southern Spain, this wine showcases the grape’s natural freshness and saline character when vinified without fortification or ageing under flor. It offers a clear expression of Palomino’s lighter, more mineral-driven side.
Aromas of lemon peel, green apple, and crushed seashells. The palate is crisp and light-bodied with flavours of citrus, raw almond, and a touch of salinity, finishing clean and dry.
Contains sulphites.
Although best known for its role in Sherry, Palomino can produce vibrant and expressive still wines when treated with care—offering a rare glimpse into the grape’s natural character, unmasked by ageing or fortification.
